Of ancient tradition, among the best-known formats, synonymous with Italian style, and highly appreciated by true pasta lovers, we present Rigatone. Mr Rigatone was born in Rome in times immemorial. He was famous for being the protagonist of the most famous recipes of his home. Er Rigatone was in Pasta alla Zozzona, in Cacio e Pepe and even in Carbonara. But Rigatone was an ambitious format. He felt like a star and decided to be admired and acclaimed by the whole peninsula. It is truly unique, capable of retaining all the sauce, both inside and out, thanks to its characteristic ridges.

It is 100% Italian durum wheat semolina pasta, dried at a slow, low temperature. For its preparation, we use only water coming from the springs of the Carnic Alps that surround our territory. No preservatives or artificial colourings.

RIGATONI WITH ZUCCHINI, PISELLI AND MEDITERRANEAN MACIOTTA

Process/Description:

📖Ingredients (about x5 servings):
-one packet of rigatoni
-4 medium/large courgettes
-100 g frozen peas
-1/4 Mediterranean maciotta
-Salt to taste
-Evo oil to taste

To prepare rigatoni with cream of peas and courgettes, start making the cream of peas. Once ready, prepare the courgettes. Peel and cut them first in half horizontally and then in 4. Then remove the middle part and cut them into cubes of about 1 cm. In a pan, brown the clove of garlic with some oil, and only when it has browned, remove it and add the courgettes.

Cook over medium-high heat for about 15 minutes, until the courgettes are nicely browned, then season with salt and pepper. Now drop the rigatoni into boiling water. Pour the pea cream into a saucepan and dilute it by adding a couple of ladlefuls of cooking water from the pasta. Once cooked, drain the pasta, and pour it back into the pan. Add the sautéed courgettes, stir and add the cream of peas. Stir and serve your whole-wheat Pennette with pea cream.
Garnish with grated Macciotta Mediterranea.
